Garlic Scape Pesto

1 cup of Garlic Scapes, sliced lengthwise (about 10-12 scapes)

1/4 cup of Pinenuts, Walnuts or Pecans

1/2 cup Extra Virgin Olive Oil

1/4 cup Parmesan Cheese

1/2 cup Basil Leaves

Juice of one Lemon

Salt (to taste)

Place garlic scapes in a food processor and pulse for 30 seconds.

​

Add the nuts and pulse for 30 seconds, then scrape down sides of bowl.

​

Add the olive oil, process 15 seconds.

​

Add the parmesan cheese and pulse until combined.

​

Add the basil and lemon juice and process until desired consistency.

​

Add salt to taste and serve immediately over pasta or as a dip for vegetables or toasts.
